Sprocket nuts

is it generally acceptable to use aluminium sprocket nuts

In my opinion, no.

They are going onto steel bolts, and you don’t want those interfaces to suffer galvanic corrosion.

Also, I imagine the torque settings would be too much for aluminium nuts

I see that they are being advertised for ‘weight-saving’, but that must be negligible and I certainly wouldn’t risk it myself.
